Creamy Garlic Butter Mushroom Risotto from Scratch relies on 1.5 lb (750 g) of fresh mushrooms browned in batches. You cook the mushrooms first to keep their golden color intact. You cut down on constant stirring by adding the stock in large increments. The rice finishes cooking in about 10 minutes.

You can use ordinary white or cremini mushrooms as the base. You can also mix in sliceable or exotic varieties like shiitake or oyster mushrooms. You provide textural contrast in the final dish by cutting the mushrooms into different shapes. The recipe calls for slicing 1 lb (500 g) of mushrooms 0.125-inch (3 mm) thick. You quarter the remaining 0.5 lb (250 g) of mushrooms.

The Garlic Butter Mushrooms

Start by cooking the mushrooms before adding the arborio rice. Combining both components in the pot simultaneously strips the mushrooms of their flavor and golden hue. Sauté the pieces in batches over high heat inside a heavy-bottomed pot so they brown rather than steam. Overcrowding the vessel, or relying on a thin-bottomed pot, makes the mushrooms release water and stew. Take the browned pieces out of the pot once they finish cooking. You stir half of this cooked batch into the completed meal to preserve their color.

The Risotto

Arborio rice provides the necessary surface starch to naturally thicken the cooking liquid. You start the Risotto by cooking minced garlic and chopped eschallots in butter. Eschallots dissolve more easily into the dish than standard onions because they have a finer texture. You can use half of a finely chopped standard onion if you do not have eschallots. You must watch the onions closely so they turn translucent but do not turn golden.

Using a dry white wine like riesling, chardonnay, or sauvignon blanc provides optimal acidity and depth. Pour 0.25 cup into the pot to deglaze the pan and dissolve the browned bits left from the mushrooms. Let the liquid stay at a fast simmer for two minutes until it almost completely disappears. You can easily swap the wine for chicken stock if you need an alcohol-free version.

Rather than adding the 5 cups of warm low-sodium chicken broth in small scoops, pour the liquid into the wide pot in large increments. Start with about 1.5 cups of the stock at a time. The grains absorb the moisture as they bubble for three minutes. Give the rice an occasional mix as it cooks. Keep repeating this step over a 10-minute period until you use all the remaining stock.

You stop adding stock when the rice is just cooked. You can add hot tap water in half-cup increments if the rice remains too firm after you use all the chicken stock.

The Finishes

You add the cream and the optional butter. You activate the rice starches and create a creamy consistency by stirring the mixture vigorously. Cream is an optional addition that makes the final color lighter. You stir in finely grated parmesan, salt, pepper, and half of the cooked mushrooms. You taste the dish at this stage and add more salt and pepper if needed. You must keep the texture loose rather than stodgy.

Real risotto needs a loose consistency that flows naturally across the dish instead of sitting in a rigid mound. If the grains turn too heavy right before eating, thoroughly mix in a little boiling water to thin out the texture. Warm up the saved batch of mushrooms using the microwave. Portion the creamy rice into bowls, then pile those extra browned mushrooms and their leftover buttery juices right in the center. Finish each bowl with a sprinkle of finely chopped parsley and a dusting of fresh parmesan cheese.

Side dishes and leftovers

Present the meal in smaller portions if you want an appetizer size. The creamy bowls go well alongside any of these choices:

  • A peppery green salad
  • Garlic bread
  • Roasted proteins like chicken, beef, or fish

Any extra portions will last in the refrigerator for three to four days. To bring back the creamy consistency when reheating the meal, add a small amount of milk and mix the rice thoroughly.

Method

Garlic Butter Mushrooms
1
Place a pot over high heat. Add the olive oil and 1 tablespoon of the butter, and add half of the mushrooms once melted.
2
Cook the mushrooms for about 4 minutes. Keep an eye on the pan so they do not turn golden or browned. Timer 4 min
3
Stir in half of the minced garlic along with 0.25 teaspoon each of salt and pepper. Cook for about 1.5 minutes until golden brown, then remove the mushrooms from the pot. Timer 1 min
4
Repeat this cooking process for the remaining mushrooms, then remove them from the pot as well.
Risotto
5
Turn down the heat to medium. Melt the risotto butter over medium heat.
6
Add the minced garlic and chopped onion. Cook for 2 minutes until translucent. Do not let the onions turn golden. Timer 2 min
7
Pour the dry white wine into the pot. Keep the liquid at a fast simmer for 2 minutes. The wine will almost disappear. Loosen any stuck bits from the bottom of the pot while it bubbles. Timer 2 min
8
Add the uncooked arborio rice to the pot. Stir for 1 minute until the grains turn semi translucent. Timer 1 min
9
Pour about 1.5 cups of the warm stock into the pot. Give the mixture a stir. Let the rice bubble for 3 minutes. The grains will soak up most of the broth during this time. You only need to stir the pot a couple of times while you wait. Timer 3 min
10
Pour about 1.5 cups of the stock into the pot. You do not need to stir the rice continuously. Just give it an occasional mix over the next 3 minutes. Wait until the liquid is mostly soaked up. Timer 3 min
11
Repeat this process two more times. Each addition of stock takes about 3 minutes to absorb. The whole process takes about 10 minutes. Stop when you use up all the stock and the rice is just cooked. The risotto will stay loose and creamy. Timer 3 min
Finishes
12
Add the cream and the optional butter. Stir vigorously to make the mixture creamy.
13
Stir in the finely grated parmesan, the salt, the pepper, and half of the cooked mushrooms. Taste the risotto and add more salt and pepper if needed, making sure the final texture stays creamy and not stodgy.
14
Reheat the remaining mushrooms in the microwave. Spoon the risotto into bowls and top with the reserved mushrooms and their buttery juices.
15
Garnish the bowls with finely chopped parsley and extra parmesan, then serve the risotto immediately.

Cook's notes

Substitutions

You can use ordinary white or cremini mushrooms as the base, or mix in sliceable exotic varieties like shiitake and oyster.

Replace the dry white wine with an extra splash of chicken stock to make an alcohol-free version of this dish.

Storage

Store leftover risotto in an airtight container in the refrigerator for three to four days.

Whenever you warm up leftovers, pour in a little milk before giving the rice a thorough mix to bring back its creamy consistency.

Serving

Authentic risotto maintains a loose consistency that spreads out naturally to fill the bottom of a shallow bowl, instead of standing up in a stiff pile.

Pair this dish with a peppery green salad, garlic bread, or roasted proteins like chicken, beef, or fish.

Common mistakes

Avoid overcrowding the pot or using a thin-bottomed pan, which will cause the mushrooms to release water and stew instead of browning.

Do not cook the mushrooms simultaneously with the rice, as they will lose their golden color and distinct flavor.

Techniques

Cutting the mushrooms into a mix of slices and quarters provides an appealing textural contrast to the final dish.

Add hot tap water in 0.5 cup increments if the arborio rice remains too firm after all the chicken stock has been absorbed.

Stir the risotto vigorously after adding the cream and butter to activate the rice starches and create a perfectly creamy consistency.

Never rinse arborio rice before cooking, as washing it removes the surface starches needed to thicken the broth naturally.

Always keep your broth or stock warm in a separate saucepan when making risotto so it does not drop the temperature of the main cooking pot.

Grate your parmesan cheese fresh from a block, because pre-grated packaged cheeses contain anti-caking agents that prevent them from melting smoothly.

Frequently asked
Can I freeze the leftover risotto?

Freezing is not recommended for this dish. Cooked arborio rice tends to become hard and grainy when thawed, and the creamy dairy-based sauce may separate.

Do I really need to keep the chicken broth warm while cooking?

Yes. Pouring cold liquid into the hot pot will rapidly drop the temperature and shock the rice. Keeping the stock warm in a separate saucepan ensures the grains cook evenly without interruption.

What type of white wine works best for deglazing?

A dry white wine such as riesling, chardonnay, or sauvignon blanc brings the best acidity and depth to the pot. If you are making an alcohol-free version, simply swap out the wine for a little more chicken stock.

Why did my mushrooms release water instead of getting a proper sear?

Overcrowding the pot or using a thin-bottomed pan traps steam and causes the mushrooms to stew. Sautéing them in batches over high heat ensures a deep, proper sear so they keep their color.

How do I fix the rice if it gets too thick right before plating?

A proper risotto spreads out to pool in the bowl instead of forming a stiff mound. If the dish gets overly thick as you mix in the last few ingredients, just pour in a small amount of boiling water and stir vigorously to thin the consistency.
