The potatoes

You will get the best texture by choosing varieties like Sebago, Yukon Gold, Russets, Maris Piper, or Dutch Creams. Avoid waxy options entirely because they fail to develop the proper crust.

Chop the potatoes into large 3-inch (7.5 cm) blocks. Small pieces will fall apart during the long boiling and roasting phases.

Boiling & Crusting

Potatoes require a lot of salt for proper seasoning. You will drop the large chunks into heavily salted water and boil them for 10 minutes. This softens the outer layers and cooks the centers.

Method

Boiling & Crusting

Preheat the oven to 450°F (230°C) or 230°C fan. Take the skins off the potatoes. Chop them into 3-inch (7.5 cm) blocks.

Place the potatoes and 1 tbsp of salt into a pot of water. Boil them for 10 minutes. Timer 10 min

Drain the potatoes well. Shake the colander a few times to force away any lingering water.

Take the empty pot off the heat. Drop the potatoes back inside. Let them sit for 5 minutes. Timer 5 min
