The beef short ribs

Beef short ribs naturally carry a lot of fat and typically look like thick, meaty blocks on the bone. For this dish, you will need 2.4 kg of bone-in beef separated into about 8 pieces weighing 10 oz (300 g) each.

Keeping a whole rack intact takes much longer to cook and turns into a messy job later. The finished beef gets too soft to slice cleanly and simply shreds under a knife. To prevent this, divide the rack into single portions before they go into the pan. If you prefer less fat in your final meal, slice the excess fat off the raw beef before cooking.

The chipotles and adobo sauce

Canned chipotles in adobo sauce consist of dried chipotles packed in a spiced red sauce. They bring heat and act as a base for many Mexican dishes.   • 2.4 kg bone-in beef short ribs, around 8 pieces at 10 oz (300 g) each
  • 28 oz can crushed tomatoes, or passata/puree
  • 4 garlic cloves, minced
  • 1 large onion, diced
  • Lime wedges
  • 0.5 cup chipotles and adobo sauce, roughly half a 7 oz (220 g) can
  • 2 tbsp olive oil
  • 2 oranges, or 1 cup orange juice
  • 1 tbsp salt, divided
  • 2 tsp black pepper
  • 1 tbsp cumin powder
  • 3 dried bay leaves, or 5 fresh
  • 4 tsp dried oregano
  • Fresh coriander or cilantro leaves

Method

Preheat the oven to 350°F (180°C) with the rack placed in the middle.

Puree the canned tomatoes and the chipotles in adobo together until smooth.

Use paper towels to dry the meat, then season the outside with 1/2 tablespoon of the salt.

Set a large pan over high heat and warm the olive oil.

Sear the meat a few pieces at a time for about 4 minutes total. You just want the outside to get nicely browned while the inside stays raw. Move the seared portions to a plate. Timer 4 min
